English Muffin Breakfast Sandwich


  • 1 English muffin, split in half and toasted
  • 1 egg, cooked over easy
  • 2 slices (about 1 oz.) soy Canadian bacon or ham
  • 1 slice (3/4 to 1 oz.) soy cheddar cheese


Layer cooked egg, Canadian bacon and cheese slice on one half of English muffin. Top with other muffin half. Eat warm.

Yield: 1 sandwich. Serving size: 1 sandwich. Per serving: 315 calories, 10 g fat (2 g sat fat), 24 g protein (5 g soy protein), 30 g carbohydrate, 765 mg sodium, 213 mg cholesterol, 3 g dietary fiber.
