Soy-Enhanced Black Bean Chili

Onions, chopped 1 lb 5 oz 1 qt 2 lb 10 oz 2 qt

1. Saute onions in oil, in a sauce pan or steam-jacketed kettle until translucent and tender.
Vegetable oil - 1/2 cup - 1/2 cup

Taco seasoning 2 1/2 oz 1/4 cup 2 Tbsp 5 oz 3/4 cup

2. Add taco seasoning, chili powder, black pepper and garlic powder to onion mixture and stir to combine.
Chili powder - 2 Tbsp - 1/4 cup

Black pepper - 1 tsp - 2 tsp  
Garlic powder - 2 tsp - 1 Tbsp 1 tsp  
Salsa, mild 2 lb 2 oz 1 qt 4 lb 4 oz 2 qt

3. Add salsa, tomato paste and water to onion mixture. Heat to boiling.
Tomato paste 4 oz 1/2 cup 8 oz 1 cup

Water - 1 qt 2 cups - 3 qt

Frozen soy burger crumbles 6 lb 1 oz - 12 lb 2 oz -

4. Add soy burger crumbles and black beans and simmer for 10 to 15 minutes.
Canned black beans, drained 4 lb 1 qt 2 cups 8 lb 3 qt

SERVING: 3/4 cup (6 oz ladle)provides 1/4 cup of vegetable
