Texturized Soy Concentrate 10 oz * 1 lb 14 oz *

1. In a bowl, add water to Texturized Soy Concentrate and Isolated Soy Protein; let hydrate for 20 minutes
Isolated Soy Protein 1 3/8 oz * 2 3/4 oz *

Water, room temperature - 3 3/4 cups - 1 qt 3 1/2 cups  
Raw ground beef (no more than 20% fat) 6 lb 4 oz * 12 lb 8 oz *

2. In a large pot or kettle, brown ground beef until no signs of pink remain. Drain excess fat.
Tomato sauce 6 lb 7 oz 1 No. 10 can 12 lb 14 oz 2 No. 10 cans w 3. Add soy concentrate mixture, tomato sauce, tomato paste, water and seasonings. Simmer about 1 hour. Remove bay leaves.

Sugar - 1 Tbsp - 2 Tbsp  
Bay leaves - 1 each - 2 each
Cooked pasta 50-1/2 cups of pasta 100-1/2 cups of pasta    

* Densities vary. Weigh for best results.

SERVING: 1/2 cup of soy-enhanced meat suace with 1/2 cup pasta provides
2 oz of meat/meat alternate, 3/8 cup of vegetable and one serving of
grains/breads
