Texturized Soy Concentrate (TSC) (unflavored, colored, 1/8" flakes) 4 oz 1 1/4 cups 8 oz 2 2/12 cups

1. Pour water over Texturized Soy Concentrate (TSC)and let stand for 20 minutes.
Water - 1-1/4 cups - 2-1/2 cups

Ground beef (no more than 24% fat) 3 lb - 6 lb -

-

2. Brown beef and onions in a large skillet or steam-jacketed kettle until no signs of pink remain. Drain excess fat and discard.

3. Combine the cooked beef with the Texturized Soy Concentrate (TSC).

4. Add garlic.

Onions, minced 1 lb 3 cups 2 lb 1 qt 2 cups  -
Granulated garlic 2 tsp - 1 Tbsp 1 tsp -

Lasagna noodles 2 lb 13 oz 45 Noodles 5 lb 8 oz 90 noodles

5. Cook lasagna noodles in a stock pot or steam-jacketed kettle for 10-12 minutes, until tender. Drain in cold water.
Parsley flakes - 1 Tbsp - 2 Tbsp    6. Combine parsely, basil, oregano, water, and tomato sauce.
Dry basil - 1 tsp - 2 tsp

Dry oregano - 1 Tbsp - 2 Tbsp

Garlic powder - 2 tsp - 1 Tbsp 1 tsp

Salt - 1-1/2 tsp - 1 Tbsp

Tomato sauce 6 lb 7 oz 1 No. 10 can 12 lb 14 oz 2 No. 10 cans

Mozzarella cheese, shredded 2 lb 8 oz 2 qt 2 cups 5 lb 5 qt  

7. Combine cheeses

8. Spread 1 cup of tomato sauce on the bottom of each 12" x 20" x 2 1/2" pan to prevent sticking.

Assembly:

First layer...
a. 7 1/2 lasagna noodles
b. 1 qt cheese mixture
c. 3 cups meat
d. 3 cups tomato sauce

Second layer...
a. repeat first layer

Third layer...
a. 7 1/2 lasagna noodles
b. 1 cup sauce

9. Cover with plastic wrap and foil.
To bake:
Conventional oven: 350° F, 60 minutes
Convection oven: 300° F, 45 minutes
Bake until bubbling.

10. Remove from oven and allow to set for 15 minutes before serving. Cut each pan 5 x 5 (25 portions per pan).

Parmesan cheese, part-skim 6 oz 1 1/2 cups 12 oz 3 cups  
Cottage cheese 2 lb 8 oz 1 qt 1/2 cup 5 lb 2 qt 1 cup  

SERVING: 7 oz provides the equivalent of 2 oz of meat / meat alternate, 1/4 cup of
vegetables and 1 serving of grains / breads.
