Putting Soy Protein to Work:
Student-tested Low-fat Recipes

Soy protein can help you meet nutritional requirements no matter which menu planning system you use. The recipes in this section reflect a few of the ways soy protein can be used in your meal plans. Each recipe counts as a meat/meat alternate for a food-based plan and uses up to 30 percent hydrated soy protein.

(If you use Nutrient Standard Menu Planning, you can use 100 percent soy protein in all-vegetarian entrees.

This set of soy-enhanced recipes was adapted and tested in the Mateer Research Kitchen of Pennsylvania State University.

Each recipe is low in fat to help you meet overall nutritional requirements. The recipes also reflect a diverse range of flavors - from a comforting Turkey Tetrazzini to a Tex-Mex-style pork fajita. And you'll find you don't need to pay a lot to reap low-fat benefits.

NOTE:

These recipes use a combination of a textured soy concentrate and isolated soy protein. You can, however, use textured soy concentrate alone or functional concentrate instead of isolated soy protein to enhance your meat products. See the glossaries in "The Soy Story" section to see which will work best for you.
