Texturized Soy Concentrate (TSC) (unflavored, colored, 1/8" flakes) 11 oz 2 1/2 cups 1 lb 6 oz 1 qt 1 cup

1. Pour hot beef broth over Texturized Soy Concentrate (TSC). Let stand for 20 minutes.
Beef broth (hot) - 2-1/2 cups - 1 qt 1 cup

Ground beef (no more than 24% fat) 6 lb 4 oz - 12 lb 8 oz -

w

2. In a large stock pot, brown beef and onions until no longer pink. Drain excess fat and discard. Add TSC mixture.
Onions, chopped 1 lb 4 oz 1 qt 1/2 cup 2 lb 8 oz 2 qt 1 cup

Canned tomatoes, diced 2 lb 1 qt  4 lb 2 qt

3. Add tomatoes, chili sauce, honey, vinegar, Worcestershire sauce, mustard, chili powder, cumin, oregano, salt and pepper to beef mixture. Heat to boiling. Reduce heat to simmer and cook for 30 minutes.

Honey - 1 cup - 2 cups

Vinegar - 1 cup - 2 cups

Worcestershire sauce - 1 cup - 2 cups

Prepared mustard - 1/2 cup - 1 cup

Chili powder - 2 Tbsp - 4 Tbsp

Ground cumin - 1 Tbsp 1 tsp - 2 Tbsp 2 tsp

Dried oregano - 1 Tbsp 1 tsp - 2 Tbsp 2 tsp

Salt - 1 Tbsp 1 tsp - 2 Tbsp 2 tsp

Black pepper - 2 tsp - 2 Tbsp 1 tsp

Frozen vegetables 2 lb 2 qt 4 lb 1 gal

4. Add vegetables and simmer for 15 minutes.

5. Sloppy Joes may be served over 1/2 cup of lettuce.

Note: For efficiency and improved flavor, the tomato sauce ingredients may be combined and refrigerated one day prior to service.
