Breakfast Scramble
Scrambled tofu has the look and even the taste of scrambled eggs. It's hard to find something faster, easier or more delicious.
2 tsp onion powder
1 tsp garlic powder
1/2 tsp turmeric
1/4 tsp pepper
1/4 tsp salt
1 tsp parsley flakes, lightly crumbled between fingers
1 lb regular tofu
Combine the onion powder, garlic powder, turmeric, pepper, salt and parsley flakes in a small dish. Crumble the tofu into a non-stick skillet or a regular skillet coated with non-stick spray. Sprinkle the combined seasonings over it and cook, stirring, over medium heat until heated through.Note: Quadruple the seasonings and store in a jar. When you want a quick scramble, just add about 5 teaspoons to the tofu in your pan. (For a single serving with 4 ounce of tofu, use about 1-1/4 tsp.)
Yield: 4 servings. Serving size: 1 cup. Per serving: 120 calories, 8 g total fat (1.2 g sat fat), 13 g pro, 3 g carb, 147 mg sodium, 0 mg cholesterol.
