Broccoli Cheddar Cheese Wedges
16 oz. frozen chopped broccoli, thawed
1/2 cup chopped onion
2 cups (8 oz.) cheddar soy cheese, shredded
1 1/4 cups plain soymilk
3 egg whites
1 Tbs soybean oil
3/4 cup soy flour
1 tsp baking powder
1 Tbs dried parsley
1 Tbs minced garlic
1/4 tsp pepperPreheat oven to 400° F. Lightly coat a 10" or 11" pie dish or casserole dish with vegetable cooking spray. Layer the broccoli, onion and cheddar cheese in dish. Combine all remaining ingredients in blender and mix until smooth. Pour over vegetable/cheese mixture and bake for about 30 to 40 minutes, until lightly browned and knife inserted near center comes out clean. Cool five minutes before cutting into wedges.
Yield: 8 wedges. Serving size: 1 wedge. Per serving: 161 calories, 7.5 g fat (1 g sat fat), 12 g protein (6 g soy protein), 10 g carbohydrate, 355 mg sodium, 0 mg cholesterol, 3 g dietary fiber.
