Meatloaf
1-1/3 cups cooked soybeans or 1/2 cup dry textured soy protein (TSP)
1-1/2 lbs lean ground beef
3 egg whites
1/4 cup chopped onion
1 cup skim milk
1 tsp salt
1/2 tsp garlic powder
1/2 tsp oregano
1 Tbs Worcestershire sauce
1/2 tsp ground pepper
1/2 tsp dry mustardMash soybeans in a food grinder, food processor or blender. Mix thoroughly with the ground beef. (If using TSP, rehydrate with 1/2 cup boiling water and let sit 5 minutes before mixing with ground meat.) Add the egg whites and onion and mix well. Add the remaining ingredients and combine thoroughly. Place mixture into a loaf pan and bake at 350° F (no need to preheat) for 1 to 1-1/2 hours, until cooked through.
Yield: 1 loaf (12 slices). Serving size: 1 slice. Per serving with soybeans: 206 calories, 13 g total fat (4.3 g sat fat), 18 g pro, 6 g carb, 283 mg sodium, 38 mg cholesterol.
Per serving with TSP: 159 calories, 10 g total fat (3.9 g sat fat), 15 g pro, 3 g carb, 253 mg sodium, 38 mg cholesterol.
