Meatloaf
1/2 cup dry textured soy protein
1 1/2 lbs lean ground beef
3 egg whites
1/4 cup chopped onion
1 cup skim milk
1 tsp salt
1/2 tsp garlic powder
1/2 tsp oregano
1 Tbs Worcestershire sauce
1/2 tsp ground pepper
1/2 tsp dry mustardRehydrate textured soy protein with 1/2 cup boiling water and let sit 5 minutes before mixing with ground meat. Add the egg whites and onion and mix well. Add the remaining ingredients and combine thoroughly. Place mixture into a loaf pan and bake at 350° F (no need to preheat) for 1 to 1 1/2 hours, until cooked through.
Yield: 1 loaf (12 slices). Serving size: 1 slice. Per serving: 159 calories, 10 g total fat (3.9 g sat fat), 15 g protein (2 g soy protein), 3 g carbohydrates, 253 mg sodium, 38 mg cholesterol, 1 g dietary fiber.
