Thai Soynut Butter Sauce
1/2 cup soynut butter
1/2 cup water
2 cloves garlic, minced
1 tablespoon ground ginger
2 tablespoons plus 1 teaspoon sesame oil
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sugar
2 to 3 green onions, choppedMix all ingredients except green onions in blender or food processor. Blend until smooth. Toss chopped green onions into sauce right before serving.
Makes about 1 1/4 cups sauce (or 10 servings of 2 tablespoons each). Per 2 tablespoon serving: 107 calories, 3.5 g protein, (3.5 g soy protein), 6 g carbohydrate, 7.5 g fat (1 g saturated fat), 0 mg cholesterol, 271 mg sodium.
